Best Vegan Banana Bread
The Best Banana Bread is easy to make too! It’s astonishing to realize that it’s vegan, low-fat, and easily gluten-free. As I learn and grow, I’m surprised by the knowledge available to help my husband with his disease and in the process support our entire family. As he regains his health and energy so do all of us, together.
It's easy to make this gluten-free by using a gluten-free flour instead of the wheat flour suggested. If you prefer this bread to be oil-free, use a silicone loaf pan otherwise lightly oil for best non-stick results. Adapted from China Study Book.
- 1 1/4 Cup whole wheat flour
- 1 Cup barley flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 large bananas
- 1 jar baby-food prunes
- 1/4 Cup raw honey
- 1 1 Tablespoon ground flaxseed meal mixed with 3 Tablespoon water
- 1/2 Cup raisins
- 2 teaspoon vanilla extract
- 3/4 Cup almond milk
- 1 tablespoon lemon juice
Preheat the oven to 350 degrees F
In a large bowl, mash the bananas until smooth.
In another bowl add the other ingredients and stir until mixed.
Add both together and stir.
Pour the batter into a 9" x 5" loaf pan
Cook for 70 minutes until knife comes clean.
