Chocolate Peanut Butter Cupcakes

Chocolate Peanut Butter Cupcakes are so yummy, you might feel a little bit guilty when eating them but don’t! They are guilt free and delicious- at the same time! Imagine, sugar-free gluten-free delight.

My husband was diagnosed a little over a year ago with type 2 diabetes. It’s been an interesting ride changing our eating habits and learning about this disease. When his birthday came around this year I wanted to make a delicious dessert that was healthy for him, but also reminded him of the brownies he would eat every year for his birthday.

Sugar-Free and Gluten-Free

I found exactly what I was looking for with these muffins. They are delicious, healthy and pretty!

RECIPE

Chocolate Peanut Butter Cupcakes. Sugar-Free & Gluten Free

Serves Servings: 12 cupcakes

So delicious you'll almost feel guilty eating them... almost!

Ingredients

  • 1/2 cup almond flour or any gluten free flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened cocoa powder
  • 1 scoop chocolate protein powder
  • 1/2 cup stevia or another sugar free option
  • 1 tsp baking powder
  • 1/2 tsp salt

Wet ingredients

  • 4 eggs
  • 6 oz half and half
  • 2 tsp vanilla extract

Chocolate & Butter

  • 1/2 cup real butter
  • 3.5 oz sugar free chocolate

Frosting

  • 1/2 cup unsweetened peanut butter
  • 1/2 cup cream
  • 1 tsp vanilla liquid stevia
  • 2 oz cream cheese softened

Directions

  1. Whisk together and set aside

  2. Blend together until smooth

  3. Melt chocolate and butter until smooth, add to other ingredients and fill each cupcake liner.

    Yummy and delectable! 

    (Optional: scoop out a teaspoon from the center of each cupcake. Add frosting to a piping bag, (or if you're like me and don’t have one, a plastic baggie cut in the corner) and add frosting to the scooped out center of the cupcake.

     

    Keep refrigerated until ready to serve.
