This delicious breakfast bread is perfect for either vegetarian and vegans with one simple tweak to the recipe. Utterly yummy and healthy.
- 1 ½ cup oat flour
- ½ cup chopped walnuts
- ¼ cup applesauce, unsweetened
- 1 ripe banana
- 2 eggs
- 1 ½ t baking powder
- 1 t vanilla extract
- 1 t cinnamon
- ½ t baking soda
- 1/3 cup raisins
- 2 T flaxseed
Mix all ingredients together until smooth. Pour into a lightly oiled bread pan unless you are using a silicone pan, then do not oil. Bake in a preheated oven on the middle rack.
To make this bread vegan, simply substitute the eggs for 2 T flaxseed mixed with 4 T water. Viola!
