Yes, nuts and banana and raisins and applesauce, no wonder it’s so juicy. Its flavor is wonderfully paired with a cold morning with a cup of tea.

Also, it’s easy to substitute the egg to make this recipe totally vegan. So Juicy Nutty Bread is a number one in my book!

This yummy bread is extra moist by using applesauce to jazz it up a bit and naturally sweetening the bread. I’ve done this a few times now (see…. And ….) and it’s incredible.

Juicy Nutty Bread

Serves 12 slices

This delicious breakfast bread is perfect for either vegetarian and vegans with one simple tweak to the recipe. Utterly yummy and healthy.


  • 1 ½ cup oat flour
  • ½ cup chopped walnuts
  • ¼ cup applesauce, unsweetened
  • 1 ripe banana
  • 2 eggs
  • 1 ½ t baking powder
  • 1 t vanilla extract
  • 1 t cinnamon
  • ½ t baking soda
  • 1/3 cup raisins
  • 2 T flaxseed


Mix all ingredients together until smooth. Pour into a lightly oiled bread pan unless you are using a silicone pan, then do not oil. Bake in a preheated oven on the middle rack.


Recipe Notes

To make this bread vegan, simply substitute the eggs for 2 T flaxseed mixed with 4 T water. Viola!
